Okay non-morning-people-ladies-who-you-or-your-husband-or-someone-in-your-household-gets-up-really-early-in-the-morning, here’s the trick. Make muffins at the beginning of the week!!! I know it sounds ridiculous and some of you are like, duh Lauren, it has taken you THAT long to figure this out, but let me set the scene…
Its 4 am. CT3 has gotten up and is scurrying around the house getting ready. Other than his alarm clock going off, which sometimes I don’t even hear, I may or may not wake up. Sometimes I feel bad for my sweet little husband who has to get up at 4:00 am everyday to get to work, then me being the bad wife I am, I DO NOT, I repeat, I DO NOT even get up to tell him bye, much less feed him. As much as I would like to, I am just not a morning person and he doesn’t really eat breakfast anyway, so it hasn’t been a big deal.
I feel bad that I am not fixing something, or at least having something worth eating in the house. CT3 really doesn’t care and for a guy who insists on taking granola bars, protein bars and yogurts for lunch, I am beginning to believe him. I WANT to feed him and have everything taken care of for him, but at 4 am what is a girl to do?? Then it hit me.
MUFFINS! Muffins are yummier than toast, you can make a whole bunch all at once AND CT3 will eat them. I can make them at the beginning of the week (which makes me feel good that I have taken the time to bake for the husband) and then he (and I) have something to eat for breakfast as he goes flying out the door in the wee hours of the morning. BONUS: They make the house smell delicious while baking.
I know some of you are thinking, wow, this chic is really stupid…just go buy a bag of donuts or something. But as I take the time to make these little breakfast things with my own little fingers, it brings me joy that I have taken the time to ACTUALLY make something for him, not just given him another granola bar (to add to the two he is already taking for lunch).
I know muffins will eventually get old and so then I will go to fruit or something, but for now it is great to make a whole batch and live off of it for the week! They taste better than cereal, are less effort than the 3 course meals and I have even enjoyed getting up, and flying out the door and grabbing a homemade muffin for myself. Even if you are just cooking for yourself I encourage you to try it!
Last week we had chocolate chip. This week is cinnamon. Any other good fix-the-night-before EASY breakfast tips??
